Creamy tomato pasta with quail ragout

Ingredients for 2 people

  • 20 fresh tomatoes
  • 1 teaspoon of tomato paste
  • Onion q.b.
  • Regular or vegetable cream
  • 2 quail breasts @quajaveneta boiled and frayed
  • Oil and salt
  • Parsley
  • 200 g of pasta to taste

Proceedings

  1. Clean the quail breasts and boil them in plenty of salted water, then fluff them with a fork.
  2. Brown the tomatoes with a little oil and some salt, then add the tomato paste.
  3. When the tomatoes are well browned, coarsely blend them, then add the cream and the frayed quail breasts.
  4. Adjust the salt, cook the pasta you prefer in plenty of salted water, and finally pour it into the pan with the sauce. Serve with fresh parsley.
