White chocolate and lemon cream with quail eggs

Ingredients

  • 160 g of white chocolate
  • 200 g of fresh liquid cream
  • 250 g of mascarpone cheese
  • 30 quail eggs @quajaveneta
  • 50 ml of lemon juice
  • 100 g of powdered sugar

Proceedings

  1. Separate the egg whites from the yolks.
  2. Whip the egg whites and set the frothy mixture you have made aside.
  3. Process the egg yolks with 50 g of sugar. Add the mascarpone cream.
  4. Melt the broken chocolate in a bain-marie.
  5. Let the chocolate cool slightly and mix it with the fresh, unwhipped cream and powdered sugar.
  6. Now combine the two creams, add the chocolate, and mix gently.
  7. Finally, add the lemon juice.
