Spaghetti with caramelized figs, speck and pieces of quail

Ingredients for 4 people
- 320 g of spaghetti
- 8 quail legs @quajaveneta
- 8 figs
- 200 g diced speck
- 20 g butter
- 2 teaspoons of sugar
- 1 cup of water
- Salt and pepper to taste.
Proceedings
- First courses, peel the figs and cut them into 4 parts.
- Then take a frying pan and melt the butter with the sugar. Add the quail thighs and then the diced bacon. Brown well for a few minutes, then add the figs and a small cup of water to the pan. Continue cooking the sauce for about 15 to 20 minutes on low heat.
- Adjust, of course according to your taste, with salt and pepper.
- Now bring salted water to a boil in a saucepan and cook the spaghetti following the time indicated on the package. When the pasta is ready, drain it and add it to the sauce. Let it all blend together and then serve.
