Savory strudel with quail breasts, pumpkin and taleggio cheese

Ingredients
- 1 roll of rectangular puff pastry
- 1 package of quail breasts @quajaveneta
- 4 slices of taleggio cheese
- 6 slices of pumpkin
- salt to taste
- extra virgin olive oil q.b
- 1 egg for brushing
Proceedings
- Remove any feathers and the central ossicle from the quail breasts. Cook them in a pan with a little oil on the skin side for about 10 minutes. Season with salt and set aside.
- Cut 6 slices about 1 cm thick from the pumpkin. Bake them in the oven at 180°C with salt and oil, for 15 minutes.
- Place slices of taleggio cheese, pumpkin and finally quail breasts in the center of the puff pastry roll. Close in a wallet shape and make cuts on the surface.
- Brush the pastry with beaten egg and bake the savory strudel in a 190°C ventilated oven for about 20-25 minutes or until the desired browning is reached.
