Savory muffins with quail eggs and bacon

Ingredients

  • 240 g of 00 flour
  • 2 medium eggs
  • 60 g of seed oil
  • 200 g of milk
  • 30 g of parmesan cheese
  • 1 sachet of instant yeast
  • 100 g of smoked bacon
  • 9 quail eggs @quajaveneta

Proceedings

  1. Cook quail eggs in boiling water for 3 minutes, peel and set aside.
  2. In a bowl put the eggs, grated parmesan cheese, seed oil and milk. Mix everything together with a whisk.
  3. Add the previously sifted flour and baking powder, and mix the mixture with a spatula.
  4. Add diced smoked bacon and mix everything together.
  5. Place a spoonful of mixture in a muffin cup, add a hard-boiled quail egg, and top with more mixture.
  6. Bake in a static oven at 180 degrees for 20 to 25 minutes.
