Rum pancakes with quail eggs

Ingredients for 15 to 20 pancakes

  • 100 g of greek yogurt
  • 90 g of 00 flour
  • 5 quail eggs @quajaveneta
  • 40 g of maltitol (or 40 g of white granulated sugar)
  • one tablespoon of rum
  • a dash of vanilla
  • 4 g chemical baker’s yeast
  • frying oil

Proceedings

  1. With a fork, beat the eggs well with the sugar. Then add the rest of the ingredients and stir until well blended.
  2. Heat the sunflower oil in a frying pan until it has reached a temperature of 160 degrees.
  3. Now put the dough into the hot oil, helping yourself with two teaspoons.
  4. Cook the pancakes, and when they are ready, drain them, allowing them to dry for a few minutes on paper towels. Finally, pass them through granulated sugar if you like.
