Quail breasts with porcini mushrooms, olives and yellow tomatoes

Ingredients for 4 people

  • 8 quail breasts @quajaveneta
  • 300 g porcini mushrooms
  • 160 g of yellow cherry tomatoes
  • 120 g black or green olives
  • 1 clove of garlic
  • Olive oil to taste.
  • 00 flour q.b. for the breadcrumbs
  • Salt & Pepper to taste

Proceedings

  1. In a skillet saute porcini mushrooms with about 2 tablespoons olive oil and a clove of garlic.
  2. When the mushrooms are cooked, set them aside and cook in the same pan the quail breasts first dipped in flour.
  3. When the breasts are well browned on both sides, add the cherry tomatoes along with a glass of water and let them cook.
  4. After about 10 minutes, add the olives as well.
  5. Season with salt and pepper, and serve.
