Millefeuille with quail eggs omelet and ham

Ingredients for about 10 appetizers

  • 6 quail eggs @quajaveneta
  • 100 g of prosciutto ham
  • 5/6 broccoli florets
  • sliced cheese
  • a loaf of bread cut into slices

Proceedings

  1. Cook 5/6 broccoletti in plenty of salted water for about 10 to 15 minutes.
  2. After the cooking time has elapsed, drain them, cut them in half and brown them just barely in the pan.
  3. Then toast the bread in the pan for a few moments.
  4. Take the herbs, wash them well and combine them with a tiny bit of oil and salt in a small bowl. Use this gravy to brush on freshly toasted bread.
  5. Now beat the eggs with a pinch of salt and cook them with a drizzle of oil in a nice wide skillet so that the omelet comes out thin.
  6. Cut the cheese into slices and the omelet into pieces the same size as the bread.
  7. Finally, assemble the millefeuille starting with the bread and then inserting the omelet, cheese, broccoli, and prosciutto. Make 2/3 layers and serve.
