Eggplant and bacon rolls with quail stuffing

Ingredients for 4 people
- 2 long eggplants
- 2 quail breasts @quajaveneta
- 8 slices of bacon
- Sauté preparation
- Oil and salt
Proceedings
- Wash the eggplants and cut them into thin slices. Place them on a hot griddle and grill them five minutes or so, turning them occasionally.
- Then place them on a plate to cool and, while waiting, proceed with cooking the quail breasts. Take a frying pan, add oil and sauté mixture, lay the breasts in it and cook for about 40 minutes. Adjust for salt.
- Once the breasts are ready, remove the skin and bones and blend them, adding the sauté and cooking oil to the blender as well. It will serve to make the dough softer.
- It is time to compose the roulade! Insert the meat mixture into the eggplant, wrap it and roll it in the bacon slice. Repeat for each eggplant slice, finally pan fry a couple more minutes to toast the bacon, then serve!
