Big salad with quail eggs, zucchini, avocado and tomatoes

Ingredients for 2 people

  • 2 large zucchini cut thinly with a peeler
  • 2 tomatoes
  • 1 small avocado
  • 10/12 quail eggs @quajaveneta
  • Oil and salt to taste.

Proceedings

  1. Brown the zucchini in a pan for a few minutes with a drizzle of oil and a little salt.
  2. Cook quail eggs in plenty of boiling water for 4 minutes.
  3. Remove the shells from the eggs and add them to the zucchini, then dice the tomato and avocado and season with oil and salt.
